id=\"How_to_Get_the_Smoked_Chicken_Rub_to_Stick_to_the_Meat\"><\/span>How to Get the Smoked Chicken Rub to Stick to the Meat?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>There are three techniques for getting the rub to adhere to the chicken.<\/p>\n<ul>\n<li>Patience<\/li>\n<li>Binders<\/li>\n<li>Go Underneath<\/li>\n<\/ul>\n<h3><span class=\"ez-toc-section\" id=\"Being_Patient\"><\/span>Being Patient<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Most people will apply the rub to one side of the chicken and then flip it over to season the other side.\u00a0 This results in most of the rub that was applied to the first side falling off.<\/p>\n<p>What you should do instead is season one side of the chicken and then wait for at least 15 minutes before flipping the chicken over and seasoning the other side.\u00a0 Waiting 15 minutes gives the salt in the rub time to draw out some moisture from the chicken will helps turn the rub into a paste that naturally adheres better to the meat.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Use_a_Binder\"><\/span>Use a Binder<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>A great trick to help the rub adhere is to apply a binder to the chicken.\u00a0 Some great binders are a thin coating of mustard or mayonnaise.<\/p>\n<p>Apply the binder layer to the chicken, using as little as possible, and then apply the rub.\u00a0 It is surprising but the flavor of the binder doesn&#8217;t really come through after the poultry has been cooked.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"Go_Underneath_the_Skin\"><\/span>Go Underneath the Skin<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>To really get the rub to adhere to and interact with the meat then you can apply it underneath the chicken skin.\u00a0 This is a great trick when you are <a href=\"https:\/\/extraordinarybbq.com\/how-to-smoke-chicken-quarters-on-a-charcoal-grill\/\">smoking chicken leg quarters<\/a> for pulled chicken and will probably be discarding the skin anyways.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"How_Long_Should_the_Chicken_Rub_Sit_on_the_Meat\"><\/span>How Long Should the Chicken Rub Sit on the Meat?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>I like to let the rub sit on the chicken for at least 30 minutes before I start cooking.\u00a0 I feel like you need at least 30 minutes for the salt and spices to start working their way into the meat.\u00a0 Here is some more details about how to use the rub to make our <a href=\"https:\/\/extraordinarybbq.com\/award-winning-chicken-thighs\/\">Award Winning Smoked Chicken Thighs.<\/a><\/p>\n<p>You can let the rub sit for overnight if desired to &#8220;dry brine&#8221; the meat but typically 4-5 hours is plenty of time.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Smoking_and_Grilling_Chicken_Seasoned_with_the_Dry_Rub\"><\/span>Smoking and Grilling Chicken Seasoned with the Dry Rub<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>There is no sugar in this rub which means it can be used for <a href=\"https:\/\/extraordinarybbq.com\/grilled-chicken-breasts\/\">high heat grilling of boneless chicken breasts<\/a> as well as <a href=\"https:\/\/extraordinarybbq.com\/smoked-chicken-breasts-bone-in\/\">low and slow smoking of bone in breasts<\/a>.<\/p>\n<p>You should be cautious about cooking chicken with this rub directly over high heat.\u00a0 The rub does not contain any sugars that could scorch but it does contain granulated garlic which can turn bitter if it burns.<\/p>\n<p>Always cook the breast to at least 165F and target a temperature of 175-185 for the legs and thighs.<\/p>\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-8692\" class=\"wprm-recipe-container\" data-recipe-id=\"8692\"
