Every once in a while…sometimes…ok, fine –\u00a0Once in a blue moon\u00a0– I get the wild idea of trying to create something healthy but still tasty.\u00a0 It’s frustrating because I enjoy UNhealthy food so much.\u00a0 But as I get older and the waistline gets increasingly difficult to maintain…along with small details like blood pressure and cholesterol…I decide I should at least TRY.<\/p>\n

So, with the Super Bowl in mind, parties filled with fatty foods, and wanting to still incorporate grilling\/smoking into a decent dish, we came up with Chicken Sausage in a Blanket.<\/p>\n

We bought a package of chicken sausage from Trader Joe’s.\u00a0 We like spicy, so it’s jalapeno flavor, but feel free to get whatever flavor your family\/friends will enjoy.<\/p>\n

We took one sheet of Phyllo dough and folded each end to the center.\u00a0 Placed the sausage at one end and rolled it up.\u00a0 Depending on how much outside crunch you want, you could probably use two sheets stacked on top each other and use the same process.<\/p>\n

Then I cooked them indirect at 200 degrees for 2 hours using a mix of hickory and apple chips. You could speed up the process with a higher temp if you choose – I just wanted to maximize the amount of smoke that got in them.<\/p>\n

Cut them up just like any other sausage.\u00a0 I had no problem neatly slicing through the “blanket”.\u00a0 Serve with toothpicks so you can dip into different sauces.\u00a0 Depending on the type of sausage you use, you could have out wing sauce, a mustard sauce, bbq sauce….can you think of others?<\/p>\n

Another fun idea:\u00a0 Make multiple flavors of sausage to\u00a0mix it up.\u00a0 For a healthy and tasty dish, it doesn’t get much easier than this chicken sausage in a blanket recipe.<\/p>\n
