My brother-in-law really drives me nuts sometimes.\u00a0 He KNOWS I love thick, juicy burgers.\u00a0 I’ve posted them.\u00a0 I talk about them.\u00a0 I adore them.\u00a0 So what does he do?\u00a0 He sends me an article to read about how thinly smashed burgers are the best.\u00a0 Thanks, Brian.\u00a0 Real nice.\u00a0 Don’t just disagree, give me a published article to back it up.<\/p>\n

There was only one thing I could do:\u00a0 Call on my burger obsessed friend, Jeff, hold a meeting (dinner), grab a few waters (beers), and make these smash burgers to prove Brian wrong.<\/p>\n

The process couldn’t be more fun.\u00a0 Mix your ground beef with ingredients and roll into balls about the size of an orange (or smaller if you prefer).\u00a0 You need to start with the balls so you can properly smash them.\u00a0 That’s the whole point.<\/p>\n

I used my cast iron skillet\"\" on the grill.\u00a0 You could definitely do these inside if you prefer…but I think you know my preferences.\u00a0 Jeff bought a cast iron griddle just for burgers. \u00a0I will say, it makes grilling several burgers easier and the surface is perfect.<\/p>\n

You need TWO good spatulas to really have smashing success.\u00a0 (See what I did there?)\u00a0 I used my Weber flat spatula\"\", intended for fish…but perfect for smashing.\u00a0 Make sure your skillet is piping hot before starting.\u00a0 This is basically searing a burger.\u00a0 Very hot, very fast.\u00a0 After 3-5 minutes, flip it.\u00a0 A few more minutes – done.<\/p>\n

There…is a slight chance…Brian MAY have been right.\u00a0 Jeff and I are completely obsessed with Smash Burgers now.\u00a0 We mix and match flavors like Baskin Robbins…except I think we’re already over 31 different varieties.\u00a0 The science behind smash burgers is interesting – I invite you to do the research yourself.\u00a0 But when that beef gets good and crispy brown….happy bellies follow.<\/p>\n
