I’m a firm believer in brining poultry.\u00a0 Without going into a long diatribe with all the reasons why, I’ll simplify by saying it exponentially increases the juiciness of your meat.<\/p>\n

The problem with brining is that it’s somewhat difficult when dealing with whole chickens and turkeys.\u00a0 What do you use?\u00a0 A large bag?\u00a0 Will it leak?\u00a0 What about a pan?\u00a0 No, it won’t cover the whole bird.\u00a0 A cooler?\u00a0 Yep, you could do that, but then you better scrub the heck out of that cooler and decontaminate before and after.\u00a0 That sounds like a lot of work.<\/p>\n

What about a large, thin bucket designed to hold multiple birds and fit in most fridges by simply removing a shelf?\u00a0 Ah, yes, perfect.<\/p>\n

I brine a lot.\u00a0 I mean…a LOT.\u00a0 So imagine my excitement when my friends at St. Louis BBQ Store introduced me to this fantastic product.\u00a0 I think my exact words were, “Oh my.\u00a0 This is perfect.\u00a0 Wow, I’m brining something today.”\u00a0 I did just that, brining two 5lb chickens <\/a>overnight.\u00a0 It was a cool night – the low was about 50 degrees – so I didn’t even use my fridge.\u00a0 I made the brine<\/a>, put the chickens in and dumped a small bag of ice over the top.\u00a0 12 hours later there was still a thick layer of ice.<\/p>\n

I haven’t even told you the best part – the genius behind this invention.\u00a0 There is a movable shelf that locks above the food to guarantee everything remains completely submerged in the brine the entire time.\u00a0 Genius I tell you, genius!\u00a0 That is certainly the most difficult part of brining, and they’ve solved it!<\/p>\n
