I have recently started washing all of my produce before it hits the grill. I don’t know if it really makes a difference or not but it makes me feel better.

You have some options on how to slice the zucchini and it really depends on how much hassle you want to deal with. The two easiest ways of slicing are into circular rounds or biased cut ovals.

When I want to put the veggies directly on the grill grates I cut on the diagonal bias as the longer slices are less likely to fall between the grates. I think this is the prettier presentation as well. That being said, it can be a pain to flip each slice one by one making sure they don’t slip.

When I want to make life easy on myself I cut the zucchini into circular rounds and toss all of the slices into a veggie basket. It is much easier to grab he basket with some tongs and give everything a shake when it is time to stir/flip.

There is no right or wrong answer here. Do what you like.

Season the Zucchini Slices

Toss the zucchini slices with about a quarter cup of oil (olive oil, peanut oil and canola oil all work fine) along with salt and pepper to taste.

A really nice touch is to toss in some minced fresh herbs like rosemary and/or dill.

I would not bother adding any dried herds as this stuff grills so fast that the dried herbs will never hydrate.

Let the zucchini marinate in the seasonings for about 30 minutes before you put them on the grill.

Grill the Zucchini on your Pellet Grill

The zucchini are going to grill fast and this is a great thing to do after you have taken your primary protein off the grill and are letting it rest.

Turn up the temperature your pellet grill to 325F. The temperature is not really critical so if you want to cook them at 450F after doing a reverse sear on your steak then that will work just fine.

Place the zucchini slices on the grate (or use a veggie basket) and let the grill for about 5-6 minutes per side.

The veggies are done when tender and they should have some slight browning or maybe even some grill marks going down.

Serve and Enjoy!

Grilled zucchini is highly versatile and might be one of the best side dishes you can make.

I think the finished product looks amazing and really enjoy the grilled veggies with grilled chicken thighs.

Of course, if you want to serve the zucchini with steaks, chops or even salmon then go ahead and knock yourself out 🙂
