Smoked Pineapple Salsa
Smoked pineapple, corn avocado and lime juice is combined to make a wonderful salsa that is perfect for fish and shrimp.

- 1 cup smoked pineapple diced
- 1/4 cup smoked corn
- 1 avocado diced
- 1 lime
Combine the pineapple, corn and avocado in a bowl.
Juice 1 lime and mix the juice into the salsa.
Mix the ingredients well.
Refrigerate for at least 30 minutes before serving over fish or shrimp.
Pineapple salsa is a great topping for fish tacos. The smokiness of this salsa lets it also pair well with pork and chicken.
Feel free to add a little heat and add 2 tbls of diced jalapenos if you want this dish to have some kick!
