Buffalo Style Smoked Cauliflower

A head of cauliflower is par-cooked in a microwave, seasoned with a dry rub then smoked and coated in Buffalo Sauce.

Equipment

  • Traeger, Pit Boss or Z Grills pellet grill

Ingredients
  

  • 1 head of cauliflower
  • Dry Rub
  • 1/2 cup smoked paprika
  • 2 tbsp brown sugar
  • 1 tbsp salt
  • 1 tsp chili powder
  • 1 tsp black pepper
  • Buffalo Sauce
  • 1/4 cup melted butter
  • 12 ounce Frank's hot sauce
  • 2/3 cup honey
  • 1 tsp black pepper
  • 1/2 tsp chili powder
  • 1/4 tsp paprika

Instructions
 

  • Trim the stalk and leaves from the cauliflower.
  • Place the cauliflower in a microwave safe bowl, cover with a damp paper towel and heat on High until tender (4-6 minutes depending upon the size of the cauliflower)
  • Season the cauliflower with the dry rub.
  • Turn on your pellet grill and set it to 250F.
  • Place the cauliflower in a disposable pan and smoke at 250F for one hour.
  • Coat the cauliflower with the Buffalo Sauce.
  • Return the cauliflower to the smoker and cook for 30 more minutes to set the sauce.
  • Remove the cauliflower from the smoker, slice and serve.

Notes

Pre-cooking the cauliflower in the microwave is the key to success for this recipe.  We are only using the pellet grill to add a layer of smoke flavor and to help the sauce penetrate and set.
