Set up your grill for indirect heating (or use your smoker) and get out a bunch of fruit wood.
Peel the membrane off the back.
Dust some rub on that side, then flip them over. Dust a liberal amount across your ribs. Do NOT rub it in. Dust.
Let the ribs set and let that rub soak in/marinate for at least 30 - 60 minutes.
Place the ribs on your grill/smoker, far away from heat. Keep the temp in the 225 range.
Smoke 1 - 3 hours, depending on your taste preference.
Wrap. Individually wrap them in heavy duty aluminum foil. 1 - 2 hours.
Last step - glaze. 15 - 60 minutes. Or if you want traditional dry Memphis style you can skip this step.
