Leftover Cheeseburger Soup

Ingredients
  

  • 2 - 3 leftover crumbled/cut up bbqed hamburgers
  • 3 tbn butter
  • 3/4 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 cup peeled and diced potatoes
  • 6 cups beef broth
  • 1 can crushed tomatoes
  • 1 1/2 tsn salt
  • 1 tsn pepper
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Sautee the onions, celery, carrots, and potatoes in a big pot with butter Let them sweat a little bit and get tender- for about 5 minutes.
  • Add the burger meat, and tomatoes - stir well.
  • Once it's bubbling, add in the beef broth. Let simmer on low until the potatoes are nice and soft-at least a half an hour.Stir in the cheddar cheese and serve.
