Leftover Cheeseburger Soup

- 2 - 3 leftover crumbled/cut up bbqed hamburgers
- 3 tbn butter
- 3/4 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1 cup peeled and diced potatoes
- 6 cups beef broth
- 1 can crushed tomatoes
- 1 1/2 tsn salt
- 1 tsn pepper
- 1/2 cup shredded cheddar cheese
Sautee the onions, celery, carrots, and potatoes in a big pot with butter Let them sweat a little bit and get tender- for about 5 minutes.
Add the burger meat, and tomatoes - stir well.
Once it's bubbling, add in the beef broth. Let simmer on low until the potatoes are nice and soft-at least a half an hour.Stir in the cheddar cheese and serve.
