Smoked Lamb Gyros
A delicious way to use leftover Smoked Leg of Lamb

For Tzatziki Sauce
- 1.5 C Greek Yogurt plain
- 1 English cucumber diced
- 2 sprigs dill
- juice from 1/2 a lemon
- salt and pepper to taste
For Gyro
- 2 - 3 slices of leftover sliced lamb
- 1 pocketless pita
- a few slices of onion
- 4 cherry tomatoes diced
- Feta Cheese
For Tzatziki Sauce
Placed diced cucumber in a colander and sprinkle with salt to help extract water. Let that sit for a little while and squeeze out as much water as possible.
Combine all ingredients using food processor, blender or immersion blender.
For Gyro
Heat pita in microwave for about 15 seconds
Heat lamb until warm
Spread Tzatziki Sauce on pita
Layer onion slices, tomato, lamb and feta cheese
