Ingredients
  

For Tzatziki Sauce

  • 1.5 C Greek Yogurt plain
  • 1 English cucumber diced
  • 2 sprigs dill
  • juice from 1/2 a lemon
  • salt and pepper to taste

For Gyro

  • 2 - 3 slices of leftover sliced lamb
  • 1 pocketless pita
  • a few slices of onion
  • 4 cherry tomatoes diced
  • Feta Cheese

Instructions
 

For Tzatziki Sauce

  • Placed diced cucumber in a colander and sprinkle with salt to help extract water. Let that sit for a little while and squeeze out as much water as possible.
  • Combine all ingredients using food processor, blender or immersion blender.

For Gyro

  • Heat pita in microwave for about 15 seconds
  • Heat lamb until warm
  • Spread Tzatziki Sauce on pita
  • Layer onion slices, tomato, lamb and feta cheese
