A salon filet is coated with mustard and brown sugar then smoked on a cedar plank.

Ingredients
  

  • Salmon filets
  • 1 tbs Stone Ground Mustard for each filet you can use any mustard you prefer
  • 1 tbs brown sugar for each filet
  • Salt & Pepper to Taste

Instructions
 

  • This couldn't be much simpler. Smear the mustard across the top of the salmon filet, then sprinkle the brown sugar across it as well.
  • Add salt & pepper to taste.
  • Smoke on a wood plank - I used cedar - for about 30 minutes, until internal temp is around 140.
