Grilled Foil Wrapped Potatoes and Onions

Now this is definitely a family favorite.  My boys ask for this every time they know daddy is grilling, which is basically 5 times a week from March – October.  Needless to say we go through a lot of potatoes!

Dice the potatoes into small pieces – maybe 2 inch pieces.  Cut up an onion (I do big chunks, so those who are not fans of onions can pick them out and give them to me).

Put the equivalent of 1 small potato on a sprayed piece of aluminum foil.  Add a handful of onion.  I also put on crushed garlic, and either some spray butter or a little dab of butter. Salt and pepper is a must as well.

Then you close those suckers up (Be careful not to tear the foil or the juices will spill out while cooking)

and throw them on the grill – direct heat.  The best part about these guys is when the bottom potatoes get crunchy – my oldest son likes to try and steal those from everyone else.  To get them good and crunchy it probably takes about 20-30 minutes on the grill.

Ingredients
  

  • 4 regular sized potatoes
  • 1 onion – cut up
  • 3 – 4 crushed garlic cloves
  • 3 pats of butter
  • Aluminum foil
  • Pam spray
  • Salt & Pepper

Instructions
 

  • Dice the potatoes into small pieces – maybe 2 inch pieces.

  • Put the equivalent of 1 small potato on a square of aluminum foil sprayed with cooking spray. Add a handful of onion. I also put on crushed garlic, and either some spray butter or a little dab of butter. Salt and pepper is a must as well.
  • Close the potatoes packets by folding up all the sides and gathering the aluminum foil at the top. (Be careful not to tear the foil or the juices will spill out while cooking)
  • Throw them on the grill – direct heat.
  • The best part about these guys is when the bottom potatoes get crunchy. To get them good and crunchy it probably takes about 20-30 minutes on the grill.
  • Carefully remove from the grill and allow to cool for a couple minutes. Open the packets, pour onto your plate and enjoy!
