Grilled Vegetables Recipe

They’re healthy.  They’re tasty.  They go with any main dish.  They’re fantastic, really. Now obviously, this has a ton of leeway.  We are constantly doing different vegetables, trying new things.  But this recipe is a standard fall back kids will eat and there won’t be any fights – family recipe.

Our favorite vegetables to grill are: zucchini, asparagus, onions, mushrooms, squash and bell peppers – yellow and red.  We’ve tried broccoli, cauliflower, green beans, carrots, pea pods.  However, the above are the ones I just don’t know if we could go even a few days without grilling they’re so good.  Seriously.

Cut veggies of choice into big pieces.  Throw them into a big bowl and add a tablespoon of olive oil.  Toss the veggies around, so they all get good and coated with the oil.  Needs more oil?  Go for it.  Then it’s time to add the good stuff.

Coat the veggies with the remaining ingredients.  I usually do this ahead of time, and let the veggies marinate in that for awhile while I start the fire and grab a drink.

on your grill and let it warm up for a couple of minutes before adding your veggies.  Give them one last stir and dump them in.

I know what you’re thinking:  Should I throw on some wood?  Of course you should. Smoke can penetrate veggies too.  And you thought it was just for meat…how silly do you feel right now…

You’ll need to stir fairly frequently otherwise things will burn.  I usually stir, replace grill cover for 3 minutes, stir, repeat.  All in all I usually get the veggies done in about 15 minutes.  You want to see some black parts on the peppers, shrunk down mushrooms and onions.  Remember, all you’re really doing is heating them up and slightly cooking them. There is no right/wrong here.  Find the “doneness” you enjoy most.

Place in a bowl, sprinkle with Parmesan cheese and cover to keep warm while you grill your main dish.  We keep ours in the microwave until everything else is ready and they stay fairly warm there.  I’m sure you will love preparing these as much as we do!

Ingredients
  

  • zucchini

  • 1/8 cup of balsamic vinegar
  • 1/8 cup brown sugar
  • 1/8 cup Worcestershire Sauce
  • some sort of steak seasoning – 1 tbn or so.

  • Mix together balsamic vinegar, brown sugar, Worcestershire Sauce and steak seasoning. Coat the veggies with the above mixture.
