So this is just a fun, easy and tasty treat.  I love little smokies. They’re just the perfect finger food for parties. And with smoke in the title, I thought to myself, why hasn’t anyone ever tried smoking them?  Seems logical, so I did it.

Couldn’t be too much simpler.  I cut slices of bacon in thirds, then wrapped them around the little smokies and held in place with a toothpick. A little tedious, but when it involves bacon, it’s a labor of love. Then I threw them in an aluminum pan and sprinkled some brown sugar.  Prep work done.

I smoked them for about 45 minutes, then quickly put them over direct fire for a quick sear to finish them. I’m telling you right now – best little smokies ever.  The bacon takes in the smoke, they sit in sugary greasy happiness in that pan and what’s left is simply delicious.

Ingredients
  

  • 1 package little smokies
  • 1 lb bacon
  • 1/4 c brown sugar

Instructions
 

  • Cut bacon slices in thirds.
  • Wrap one piece around each little smokie and hold in place with a toothpick.
  • Place in an aluminum pan and sprinkle with brown sugar.
  • Set up your grill for indirect cooking.
  • Smoke for about 45 minutes using hickory wood.
  • Finish by searing over direct heat for just a minute or two until bacon crisps - be careful not to burn the bacon too much!
