So this is just a fun, easy and tasty treat. I love little smokies. They’re just the perfect finger food for parties. And with smoke in the title, I thought to myself, why hasn’t anyone ever tried smoking them? Seems logical, so I did it.
Couldn’t be too much simpler. I cut slices of bacon in thirds, then wrapped them around the little smokies and held in place with a toothpick. A little tedious, but when it involves bacon, it’s a labor of love. Then I threw them in an aluminum pan and sprinkled some brown sugar. Prep work done.
I smoked them for about 45 minutes, then quickly put them over direct fire for a quick sear to finish them. I’m telling you right now – best little smokies ever. The bacon takes in the smoke, they sit in sugary greasy happiness in that pan and what’s left is simply delicious.
Smoked Bacon Wrapped Little Smokies
Ingredients
- 1 package little smokies
- 1 lb bacon
- 1/4 c brown sugar
Instructions
- Cut bacon slices in thirds.
- Wrap one piece around each little smokie and hold in place with a toothpick.
- Place in an aluminum pan and sprinkle with brown sugar.
- Set up your grill for indirect cooking.
- Smoke for about 45 minutes using hickory wood.
- Finish by searing over direct heat for just a minute or two until bacon crisps - be careful not to burn the bacon too much!
What temperature do you smoke them at? Around 225?
Yep! I smoke just about everything at 225-250.
