I’m always looking for excuses to use my cast iron skillet. I love it. One of the absolute best uses of it in my opinion, is corn bread. The recipe is simple and the results are delicious.
I also love my Weber charcoal grill so if I have a chance to combine cast iron with grilling then I am going for it!

You might notice in the above picture that I got so excited about eating it that I started to slice it before my sister could snap a picture. She wasn’t super happy about that.
How to Cook Cornbread on a Weber Grill
Using the right amount of charcoal is important for this recipe. If you are using a gas grill then set your burners to Medium.
If you use too much charcoal then the grill will get too hot and burn the bottom of the cornbread. I would err on the side of using less charcoal which would lower the temperature but the end result would just be an extended cooking time.
Try using about 2/3 of a chimney of Kingsford briquettes for this recipe. After the charcoal is lit, spread them evenly in a single layer on the charcoal grate. Keep your top and bottom air vents completely open.
After the charcoal is in the grill, lightly oil a 10 inch cast iron skillet and place it on the center of the cooking grate to preheat.
While the cast iron is heating combine the cornbread ingredients. We like our cornbread on the sweet side but you can cut back on the sugar if you like.
Pour the cornbread mix into the cast iron skillet, close the lid and let the cornbread cook.
The cornbread is ready in about 25-30 minutes when you can slide a toothpick into the center and it pulls out clean. If the toothpick comes out wet or sticky then let it cook a little longer.
Cornbread on the Grill

- 10 inch cast iron skillet
Ingredients
- 1/2 cup butter
- 2/3 cup white sugar
- 2 eggs
- 1 cup of milk or, gulp, buttermilk if you so dare
- 1/2 tsn baking soda
- 1 cup cornmeal
- 1 cup all purpose flour
- 1 tsn salt
Instructions
- Mix ingredients together in a bowl.
- Pour into a large cast iron skillet.
- Place the skillet on the grill when the fire is at approximately 350. Bake for 30ish minutes, or edges brown.
- Cut into pieces, spread some butter and drizzle some honey on each piece, and get ready to be amazed.
