Leftover Smoked Salmon Salad

So far, I have yet to find a way that I don’t love salmon.  This creamy salmon salad is DELICIOUS.  I ate it as a lettuce wrap, I ate it with crackers, I ate it atop cucumber slices – it’s just good.  It just is.

We bought a huge fresh salmon fillet at Sam’s the other day and Kevin smoked it.

After eating most of the salmon for dinner, we still had a lot of leftovers that I divided  into portions for a few different leftover ideas.

This was a huge hit and one that I will be looking forward to again when we do another salmon…hopefully soon!

About the Ingredients

We used leftover smoked salmon for this salad but grilled salmon works just as well.

To keep things light and healthy we used “light mayonnaise” which, depending upon which brand you use, has about 35 calories per tablespoon.  You could also use the amazing healthy mayonnaise from Primal Kitchens.  The PK mayo uses avocado oil for the fat which raises the calorie count but the fat profile is much better for you than other mayos.

We made this extra flavorful by using a Cajun seasoning and our smoke roasted garlic.  You could use Old Bay Seafood seasoning as a substitute.

How to Serve

Use this creamy salad in a wrap, serve in lettuce cups or just eat it straight from the bowl like nobody is looking!

Ingredients
  

  • 1 1/2 cups of leftover smoked salmon
  • 3/4 cup of light mayonnaise
  • 1 tsn blackened rub Cajun
  • 1/3 cup chopped celery
  • 1 tsn dijon mustard
  • 2 cloves of smashed smoked roasted garlic
  • juice of 1/2 lemon

Instructions
 

  • Mix all ingredients together gently and store in the refrigerator.
  • This can make ahead of time and will keep for 3-5 days.
