Fall is upon us, and that means warm bowls of soup and chili.
I’ll be honest – we were all just really excited to make a soup with the lamb bone and scraps. It was our first lamb and we thought, what the heck! This will be fun. It didn’t matter how good it turned out. We were all just really excited that we made homemade lamb broth. Now we can check that off our cooking bucket list. 😉
That being said, this turned out pretty darn good! Very different flavor than I’m used to when I think of soup. I’m not even sure if I’ve ever had barley before either. So this cup o’ soup was filled with firsts for me. The flavor was strong – much stronger than a chicken broth based soup. Very unique, very rich. If you like lamb, you’ll like this soup. It’s a flavor unlike any soup you’ve had – plus add in the touch of smoke from the original smoking process on the leg of lamb – and you’ve got one heck of a tasty soup.
Lamb and Barley Soup
Ingredients
For Broth
- Lamb Bone
- Carrot I used the ones we cooked with the lamb bone
- Celery
- Onion
For Soup
- 2 celery stalks chopped
- 2 carrots chopped
- 2 tsp Herb Garlic Seasoning
- Broth
- 1 tsp Rosemary
- 1 tsp Thyme
- 1/2 cup uncooked barley
- approximately 1 C chopped lamb meat
Instructions
For Broth
- Throw all of the above together in a large stock pot, and fill with water until the carcass is covered.
- Simmer on low for at least an hour but for much longer if possible.
- Strain into a bowl, discard all of the above ingredients.
For Soup
- Saute the celery and carrots in oil until soft.
- Add the Herb Garlic Seasoning and saute for 2 minutes
- Add the rest of the soup ingredients and simmer for an hour.

Barley makes everything better! One of my favorite grains and it’s great because it’s a whole grain. Comes now in quick-cooking which makes the soup process a lot faster. I’m not a huge lamb fan, but Mike is, so maybe I’ll be brave and try this!
