My cousin Nick came up with this recipe and it does not disappoint. In fact, it’s so tasty, we incorporated it into Danny BBQ Beans recipe, since it adds a whole new flavor profile.
This is a 1lb roll of Italian Sausage, packaging removed, getting smothered in All Purpose Rub. Cover every last inch.
Set up your grill for indirect cooking and smoke for about 1.5 hours at 225 using whatever wood you want, until your internal temperature is at least 165. I use hickory.
Slice and serve with your favorite cheese and crackers. I prefer an aged sharp cheddar – I think it compliments the smoky meat. I can’t tell you how impressive it is to pull this off the grill as your guests are arriving. What a way to start off a party. Thank you, Nick, for this delicious Smoked Sausage Roll recipe. Nick’s Smoked Sausage Roll
Ingredients
- 1 lb Italian Sausage
- 3 - 4 tbs All Purpose Rub
Instructions
- Cut the packaging off the roll of Italian Sausage and place on a piece of waxed paper or clean surface.
- Roll it around on the Rub. All over. Cover every last inch.
- Set up your grill for indirect cooking and smoke with hickory chips for 1 - 2 hours, until internal temperature is 160.
