Smoked Sausage Roll Recipe

Do you want to impress everyone that comes over to your house for your next BBQ?

If you answered yes to any of those questions (you should have answered yes to all 3), then read on and be excited.  This is about to become a staple at your house.

My cousin Nick came up with this recipe and it does not disappoint.  In fact, it’s so tasty, we incorporated it into Danny BBQ Beans recipe, since it adds a whole new flavor profile.

 Cover the Sausage in dry rub

This is a 1lb roll of Italian Sausage, packaging removed, getting smothered in All Purpose Rub.  Cover every last inch.

Smoked the sausage with indirect heat

Set up your grill for indirect cooking and smoke for about 1.5 hours at 225 using whatever wood you want, until your internal temperature is at least 165.  I use hickory.

Smoked Sausage with Cheese and crackers

Slice and serve with your favorite cheese and crackers.  I prefer an aged sharp cheddar – I think it compliments the smoky meat.  I can’t tell you how impressive it is to pull this off the grill as your guests are arriving.  What a way to start off a party.  Thank you, Nick, for this delicious Smoked Sausage Roll recipe.  Aside from your twins that are on the way, this might be your greatest creation.  🙂

Nick’s Smoked Sausage Roll

  • 1 lb Italian Sausage
  • 3 - 4 tbs All Purpose Rub


  • Cut the packaging off the roll of Italian Sausage and place on a piece of waxed paper or clean surface.
  • Roll it around on the Rub. All over. Cover every last inch.
  • Set up your grill for indirect cooking and smoke with hickory chips for 1 - 2 hours, until internal temperature is 160.
