There’s an ongoing joke in our house. Every time Patti mentions fish, I let out an audible sigh, a look of disgust, and say that doesn’t sound good. Then she says, “I know. You always say that, but we’re having this anyway.” That’s usually followed with me getting an ice cold frosty beverage and heading outside to light my grill.
This was no exception. Salmon burgers? Ugggghhhh…can’t we just make regular burgers? A delicious spicy burger, a fantastic bacon cheeseburger or something else unique? No, no, we’re gonna be “healthy” tonight. Fine.
Once I got over the initial disappointment, however, I found these to be quite interesting and fun to prepare. Now, you need to know, the first step is that I got to use a grinder. That’s fun. We took a large piece of fresh salmon and ground it up to make burgers.
Patti then added deliciousness to it and handed over the patties. Ha ha…Patti made patties. See what I did there?
Since salmon is a bit more delicate than other types of burgers I grill, I decided to put down a piece of aluminum foil. I thought it might not make it if put directly on the grate. It worked out really well. It only took a few minutes to cook, the rest was in the sauce. Good stuff.
Suffice to say, I will NOT be complaining next time Patti tells me we’re having Salmon burgers for dinner.

Grilled Salmon Burgers With A White Lemon Sauce
Ingredients
For Burgers
- 2 full fresh salmon fillet ground or food processed.
- 1/4 cup fresh lemon juice
- 1 1/2 tbn dijon mustard
- 1 small onion diced
- 1 tsn red pepper flakes
- 3 garlic cloves crushed
- 1/4 tsn salt
- 1/8 tsn pepper
- 2 large eggs
- 1 cup panko or bread crumbs
- 1 tbn fresh parsley
- 1 tbn mayo
For White Sauce
- 1 cup of mayo
- 1 tbn lemon juice
- 2 tbn dijon mustard
- 1/2 tsn garlic salt
- salt and pepper to taste
- 2 tsn parsley
Instructions
- Grind the salmon in a meat grinder or food processor
- Mix all ingredients for burgers in a bowl
- Make into patties
- Set up grill for direct cooking
- Place piece of foil across grate
- Add wood chips if you want - i used apple chips
- Cook burgers for 3-5 minutes per side
Since I’m on a huge healthy eating kick I’m going to have to give these a try. The Lemon Aoili (white sauce) sounds fantastic. I might add a little finely diced jalapeno to it though. Thanks so much for the inspiration.
Thanks Larry. I think you’ll love them. Jalapeno is a great idea. We tried to make it family friendly for kids, hence the lack of spice. Let me know how they turn out!

Ha! I don’t know you Amy, but I like you! Don’t let Kevin fool you, he’s actually the “Patty” master…he’s a perfectionist. Each burger must be 100% symmetrical, equal in weight and size – he may even use rulers and protractors – I don’t know. And if you have my ideas and recipes, you don’t need me for anything! Although I would love to hear how your meal turns out!
