Amazing how some of the best creations come from random circumstances.
At the Wildwood BBQ Bash, we had a LOT of pulled pork, and a LOT of my wife’s homemade Cole Slaw. We needed a unique idea to sell the abundance of food we had. That’s when my buddy, Big Pfeif, stepped up and said, “go buy a bunch of tortillas”.
“Huh?”
“Just trust me on this, go buy a bunch of tortillas, I have an idea.”
So we did. We bought a bunch. And by a bunch, I mean 250. We quickly got to work crisping the tortillas up on the grill, then Big Pfeif dumped some pork, Cole Slaw, and BBQ Sauce into the tortilla, and said, “Here. Sloppy Taco’s. Sell them.”
And we sold all 250.
…Ok. I lied. We only sold about 200 of them. Because the other 50 were consumed by our team like a horde of starving people that hadn’t eaten in a week. I may or may not have eaten 3. Or 8. I’d rather not say.
I give my Extraordinary BBQ guarantee that these Sloppy Taco’s will be gobbled up by whomever you make them for. Your only issue will be not making enough.
Leftover Pulled Pork Taco
Ingredients
- Tortillas - any type you prefer.
- Smoked Pulled Pork
- Cole Slaw
- BBQ Sauce
- Any other toppings:
- Sour Cream
- Guacamole
- Salsa
- Cheese
Instructions
- Set up your grill for direct cooking - low temp - around 250 or less.
- Place tortillas directly on the grill for 2-3 minutes, turning to achieve lovely grill marks.
- Flip and do it again on the other side.
- Fill the crispy tortilla with pork, cole slaw, and a squirt of sauce. Add any other toppings you prefer!
